Leo's Bobotie

2 onions, finely sliced

2 cloves of garlic, sliced

2 large tomatoes, diced

1 apple, grated

1 cup of mushrooms, diced

1 cup of beef mince

2 slices white bread, soaked in a little milk with crusts removed

½ cup sultanas

½ cup chutney

4 tsp curry powder

2 tsp cumin

1/2 tsp turmeric, paprika and chilli flakes, cinnamon and ginger

¼ tsp ground coriander, fennel seeds

2 bay leaves

2 eggs

200ml milk

½ cup desiccated coconut, toasted


Cook onions in oil with a little salt and sugar until golden. Add garlic and all spices, cooking until aromatic. Transfer to a dish.


To the saucepan, add diced mushrooms and beef (or two cups of one or the other).


When cooked, add onions mixture, tomatoes, sultanas, chutney, grated apple and white bread mixture and desiccated coconut. Combine well and salt to taste.


Place in baking dish and allow to cool. When cool, decorate with halved tomatoes. Whisk together eggs and milk and pour on top of mixture. Decorate with bay leaves. Bake in the oven for 30 minutes until egg topping has set.
