Leo's Bulgogi

500g beef (any fatty cut) finely sliced

2 cups nashi pear puree

1 small onion

4 cloves garlic

1 tsp ginger

4 tbsp light soy sauce

2 tbsp raw sugar

A good pinch of black pepper

1 tbsp sesame oil

1 tsp cornflour

½ onion, sliced in slivers


Puree onion, garlic, ginger (and nashi pear if not already pureed). Add to pureed nashi pear. Place marinade in a large bowl and mix with the soy sauce, raw sugar, pepper and sesame oil. Add sliced beef and allow to marinate for at least 30 mins or overnight if it is a tough cut of beef.


Strain beef and marinade, keeping both. Reduce the more liquidy marinade in a saucepan and add a litle cornflour to thicken. Grill beef mixture in a skillet on high heat until the beef is cooked and its sauce has thickened. Reincorporate the marinade and the beef and incorporate. In a dry pan, char some slivers of raw onion. Serve in a bowl garnished with charred onion and toasted sesame seeds. Serve with rice.
