Leo's Kelp Salad (천사채)

2 cups kelp noodles
1/2 cup grated carrot
1/4 cup julienned cucumber
1/4 cup shredded crab stick or seafood extender
1 fried egg, julienned
1 tsbp vinegar
1 tsbp raw sugar
1/4 tsp salt
1 tbsp gyeoja (겨자) mustard (optional)
1 tbsp raw sugar (optional)
4 tbsp kewpie mayonaise
Soak kelp noodles in water for 2 mins, then rinse well. Cut noodles with scissors and then place them in a mixing bowl. If desired, season with vinegar, sugar and salt.
Add cucumber, egg, crab stick, carrots and combine. In a small bowl, mix together mayonaise, raw sugar and mustard. When well combined, add to the noodles and combine. Garnish with toasted sesame seeds.
